    Prepare and marinate

    Pat the chicken thighs dry with paper towels. In a bowl combine 2 tbs grated ginger, 1 tsp minced garlic, 2 tbs light soy sauce, 1 tbs mirin, 1 tsp sesame oil, 1 tsp sugar, 1/2 tsp salt and 1/4 tsp ground white pepper. Rub the marinade evenly over the chicken thighs, coating both sides. Cover and refrigerate for at least 30 minutes, up to 3 hours (30 minutes is fine for a half portion).

    Bring to room temperature

    About 15 minutes before cooking, remove the chicken from the refrigerator to take off chill for more even cooking.

    Sear the chicken

    Heat a large skillet over medium-high heat and add 1 tsp neutral oil. When shimmering, place the chicken thighs skin-side down (press gently so skin contacts the pan). Cook without moving for 6–8 minutes until the skin is deep golden brown and releases easily. Reduce heat to medium-low, flip the thighs and cook 4–6 minutes more until the internal temperature reaches 165°F (74°C) or juices run clear. If thighs are thick, cover loosely and cook an extra 2–3 minutes. Remove chicken to a plate and tent with foil to rest.

Golden Sauce

    Toast ginger and aromatics

    Wipe out most of the fat from the skillet, leaving about 1 tsp. Add 1 tbs julienned ginger and 1 tsp sliced garlic to the pan and cook over medium heat, stirring, for about 30–45 seconds until fragrant and just beginning to color.

    Deglaze and combine

    Pour in 1 tbs rice vinegar and 0.25 cups chicken stock (or water) to deglaze the pan, scraping any browned bits. Stir in 1.5 tbs honey and 1 tbs light soy sauce and bring to a gentle simmer.

    Thicken into a glossy golden sauce

    Mix 1 tsp cornstarch with 1 tsp cold water to make a slurry. While stirring the simmering sauce, slowly whisk in the slurry. Cook 1–2 minutes until the sauce thickens and becomes glossy. Remove from heat and swirl in 1 tbs butter for shine and 1 tsp sesame seeds if using. Taste and adjust — add a pinch of salt, a drop more soy, or 1/2 tsp additional honey if you prefer sweeter.

    Finish with aromatics

    Stir in 1 tbs thinly sliced green onion into the sauce (reserve a few for garnish).

    Coat the chicken

    Return the rested chicken thighs to the skillet (skin-side up) and spoon the golden sauce over them, spooning and cooking over low heat for 1–2 minutes so the flavors marry and the exterior is glazed. Do not overcook — just warm through to serving temperature.

Finish & Serve

    Transfer the glazed chicken to a serving plate. Spoon extra sauce over the top, sprinkle with reserved sliced green onion and toasted sesame seeds. Serve immediately with steamed rice or noodles and lemon/lime wedges on the side to brighten the dish.

    Storage: Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently in a skillet over low heat, adding a splash of water or stock to loosen the sauce if needed.
