Beef & Marinade

1. Slice and marinate

Thinly slice the flank steak across the grain into strips about 1/8-1/4 inch thick. In a bowl combine 2 tbs light soy sauce, 1 tbs Shaoxing wine, 1 tsp cornstarch, 1 tsp vegetable oil and (if using) 1 tsp baking soda. Add the sliced beef and toss until evenly coated. Let marinate 15–30 minutes while preparing other ingredients.

Noodles

2. Cook and loosen noodles

Cook 8 oz egg or chow mein noodles according to package directions until just al dente. Drain and rinse briefly under warm water to remove excess starch. Toss with 1 tsp neutral oil to keep them from sticking and set aside.

Sauce

3. Mix sauce

In a small bowl whisk together 2 tbs oyster sauce, 2 tbs light soy sauce, 1 tsp dark soy sauce (optional), 1/2 tsp sugar, 1/2 cup warm chicken or beef broth, and 1 tsp cornstarch until smooth. Stir in 1 tsp sesame oil. Keep sauce nearby.

Vegetables

4. Prepare and par-cook broccoli

Bring a pot of water to a boil and blanch 3 cups broccoli florets for 30–45 seconds until bright green and slightly tender. Immediately transfer to an ice bath or cold water to stop cooking. Drain thoroughly and set aside. Meanwhile slice the carrot, onion, mince garlic and ginger, and slice green onions.

Stir-Fry & Assemble

5. Cook beef

Heat a wok or large skillet over high heat until very hot. Add 1 tbs neutral oil and swirl. Add the marinated beef in a single layer, spreading strips out so they sear. Do not overcrowd; cook 1–2 minutes, stirring once or twice, until beef is mostly browned but not fully cooked through. Remove beef to a plate and set aside.

6. Cook aromatics and vegetables

Add the remaining 1 tbs neutral oil to the wok. Add the sliced onion and julienned carrot and stir-fry 1–2 minutes until they begin to soften. Add minced garlic and ginger and stir 20–30 seconds until fragrant. Add the blanched broccoli and toss to combine, cooking 30–60 seconds to heat through.

7. Combine beef, noodles, and sauce

Return the beef to the wok along with the cooked noodles. Give the sauce a quick stir (cornstarch may settle) and pour it over the ingredients. Toss everything together with tongs or a spatula to coat evenly. Stir-fry 1–2 minutes until the sauce thickens and coats the beef, vegetables, and noodles and the beef reaches desired doneness.

8. Finish and season

Taste and adjust seasoning with up to 1/4 tsp salt and 1/4 tsp black pepper if needed. Drizzle 1/2 tsp sesame oil for flavor and add sliced green onions. Toss once more.

9. Serve

Transfer the beef with broccoli chow mein to a serving platter or individual plates and serve hot.
