House Honey Vinaigrette

Combine wet ingredients

In a medium bowl or a jar with a tight-fitting lid, add the apple cider vinegar, honey, Dijon mustard, and fresh lemon juice. Whisk or shake briefly until the honey is mostly dissolved and the mustard is incorporated.

Add aromatics and seasoning

Stir in the minced shallot or garlic (if using), then add the salt and freshly ground black pepper. Taste and adjust seasoning—add an extra 1/4 teaspoon salt or a squeeze more lemon if needed.

Emulsify with oil

Slowly drizzle in or pour the extra-virgin olive oil while whisking constantly to create an emulsion. If using a jar, add the oil, secure the lid, and shake vigorously for 20–30 seconds until the dressing is pale and emulsified. The dressing should be smooth and slightly thickened.

Let the vinaigrette rest for 5–10 minutes at room temperature to allow the flavors to meld. If storing, keep refrigerated in a sealed container for up to 5 days; re-whisk or shake before using.

Prepare produce

Wash and spin dry the mixed baby greens. Core and dice the green apple into bite-sized pieces (leave skin on for texture and color). Thinly slice the cucumber and very thinly slice the red onion. If you prefer milder onion, soak the slices in cold water for 5 minutes and drain.

Toast nuts (optional)

If using walnuts or pecans, toast them in a dry skillet over medium heat for 3–4 minutes, stirring frequently, until fragrant and lightly browned. Remove from heat and let cool slightly, then roughly chop if desired.

Assemble salad

Place the mixed greens in a large bowl. Scatter the diced green apple, sliced cucumber, and red onion over the greens. Add the toasted nuts and crumbled cheese if using.

Dress and toss

Just before serving, pour about 3–4 tablespoons of the honey vinaigrette over the salad (start with less; you can always add more). Gently toss until the ingredients are lightly coated. Taste and add more dressing, salt, or pepper as desired.

Divide the salad among plates or serve family-style. Serve immediately so the greens remain crisp.
