Its lively palate displays peach, citrus and honey with a full-bodied sweetness balanced by a refreshing mouth feel.

If using the honey rim, dip the outer lip of a large wine glass or tumbler into warmed honey, then gently press into the crushed graham cracker or ground almond mixture to coat the rim. Chill for 5 minutes while you prepare the cocktail.

Prepare glass

Fill the chilled glass with ice cubes (about 1 cup).

In a mixing glass or cocktail shaker (no need to shake vigorously because Moscato is sparkling/fragile), combine the chilled Moscato (1.5 cups), peach nectar or purée (1/2 cup), fresh lemon juice (1 tablespoon) and honey (1 teaspoon). If using a thicker peach purée or firm honey, stir gently until the honey is fully dissolved and the mixture is smooth and homogeneous (about 15–30 seconds).

Taste for balance: the Moscato is sweet and fruity, the peach adds body and peach character, and the lemon cuts the sweetness. If you prefer slightly less sweetness, add an extra 1/2 tablespoon lemon juice. If you prefer more peach, add up to 2 tablespoons more peach nectar.

Pour the Moscato-peach mixture over the ice in your prepared glass, leaving about 1/4 cup at the top for soda.

Top gently with chilled club soda (1/2 cup) to add a refreshing mouthfeel and lift the aromatics. Stir once gently with a bar spoon to incorporate (1–2 slow turns) so you preserve the bubbles and delicate aromatics.

Garnish with 2 thin peach slices and 1–2 fresh mint sprigs. Serve immediately.

Warm 1 tablespoon honey in a small bowl or microwave for 5–8 seconds until runny but not hot.

Spread the crushed graham crackers or ground almonds on a small plate. Dip the glass rim first into the warmed honey (rotate to coat evenly) then into the crumbs to adhere. Allow to set for 2–3 minutes before adding ice and the cocktail.
