Place the unopened bottle of Errazuriz Sauvignon Blanc in a large container or sink. Add the ice and water to create an ice bath, fully submerging the bottle. Let chill for 15–20 minutes until the bottle feels cold to the touch (about 45–50°F / 7–10°C). Remove and towel dry.

Rapid chill (if bottle not already chilled)

If you have time, place the bottle upright in the refrigerator for 2–4 hours before serving to cool gently to the ideal temperature (approximately 45–50°F / 7–10°C).

Refrigerator method

Select clean, stemmed white wine glasses. Rinse them in cold water and air-dry or dry with a lint-free towel to avoid any residual odors that might interfere with the wine's floral and fruit aromas.

Prepare the garnishes: thinly slice half a green apple (use half for 4 glasses), cut honeydew into small melon balls or 1/2-inch cubes, and thinly slice the apricot. Place a couple of apple slices and a few melon pieces on a small platter for guests to sniff or briefly rest on the rim of the glass. Do not leave fruit in the wine; garnishes are for aroma and presentation.

Open the chilled bottle and pour a small amount (approx. 1–2 oz / 30–60 ml) into a glass to swirl and smell. Note the green apple and honeydew aromas and look for delicate floral accents and a hint of fresh apricot.

If the aromas are muted, gently swirl the glass to release the volatile aromatics. Smell again, focusing on the primary fruit (green apple, honeydew), floral notes, and the subtle apricot suggestion.

Pour 4 equal servings (about 5–6 oz / 150–180 ml per glass) from the bottle, filling each glass to the widest part to allow aromas to concentrate.

Serve immediately at the recommended temperature. Encourage guests to take a small sip first to acclimate the palate, then continue tasting to observe mid-palate texture and finish.
