Bursting with peach and a hint of apple flavour on the nose. Nice, rich emollient wine that is off dry with a nice acidity that keeps it fresh.

If you do not have simple syrup or prefer agave, measure the 2 tsp of syrup/nectar and set aside. To make small-batch simple syrup: combine 2 tbsp sugar and 2 tbsp water in a small saucepan, heat gently until sugar dissolves, cool to room temperature and use 2 tsp for the recipe (store remainder refrigerated).

Make syrup (if needed)

Peach: wash, pit and slice half into thin wedges; finely dice remaining slices to yield roughly 2 tablespoons of diced peach. Reserve a thin slice for garnish.

Green apple: core and finely dice a tablespoon (about 1/2 of the half apple) to release aroma; reserve a thin slice for garnish. Toss the diced apple with a few drops of lemon to prevent browning.

Lemon: zest a little (optional, for aromatics) and juice 1/2 lemon (about 1 tbsp).

In a large pitcher (1.5–2 L capacity), add the diced peach and diced apple. Muddle lightly with the back of a wooden spoon or muddler to bruise the fruit and release juices and aroma, but do not liquefy—aim for fragrant bits.

Pour in the entire bottle (750 ml) of chilled Dr. Loosen Riesling.

Add the 2 tsp simple syrup (or agave) and 1 tsp peach schnapps if using. Add the lemon juice and a little lemon zest if desired to brighten acidity and echo the wine's freshness. Stir gently to combine.

Chill the pitcher in the refrigerator for 20–30 minutes to let flavors marry. (If short on time, proceed immediately but the flavor will be less integrated.)

Just before serving, add the 200 ml chilled club soda to the pitcher and stir gently to preserve bubbles.

Fill 4 wine glasses with ice (about 1/2 cup ice per glass). Pour the Riesling fruit mixture over the ice, distributing fruit evenly.

Garnish each glass with a reserved thin peach slice, a thin apple slice, and 1 mint sprig. Optionally express a small lemon zest over each glass to add aromatic oils.

Serve immediately while chilled and fizzy. Encourage guests to sip around the fruit pieces to enjoy the peach and apple notes that echo the wine's nose.
