If your peaches have fuzzy skins and you prefer a silky puree, score an X on the peach bottoms and blanch in boiling water 20–30 seconds, then plunge into ice water. Peel skins and pit the peaches.

Blanch and peel (if using fresh peaches)

Cut peaches into chunks and place in a blender. Add 1 tablespoon lemon juice to preserve color. Blend until smooth, about 20–30 seconds. Strain through a fine mesh sieve if you want a smoother texture. Measure out 1/2 cup puree for the cocktail; reserve any extra for other uses.

In a large mixing pitcher, combine 1 cup Domaine De Chaberton Bacchus, 1/2 cup peach schnapps, 1/2 cup fresh peach puree and 2 tablespoons fresh lemon juice.

Add 1 tablespoon simple syrup (adjust to taste depending on the sweetness of the peaches and wine). Stir gently to combine — avoid vigorous stirring to keep some of the wine's aromatics intact.

Taste and adjust: if the mixture is too sweet, add up to 2 tablespoons more wine; if too tart, add up to 1 tablespoon more simple syrup.

Fill a large pitcher or individual glasses with ice (about 2 cups for a pitcher serving 4). Pour the cocktail base over the ice so it chills quickly.

Top each glass (or the pitcher) with chilled club soda or sparkling water — about 1 cup total for a pitcher (approximately 1/4 cup per serving) — to add a refreshing sparkle. Gently stir once to integrate the bubbles without flattening them.

Taste and, if desired, add 3 drops muscat drop or orange bitters per pitcher to accentuate the wine's light muscat aromas and give depth to the aroma profile.

Garnish each glass with a sprig of fresh mint and a thin peach slice. Serve immediately while effervescent and aromatic.

This recipe highlights Domaine De Chaberton Bacchus's intense peach and muscat-like aromas. For a lighter version, reduce peach schnapps to 1/4 cup and increase wine to 1 1/4 cups. For a non-alcoholic mocktail, substitute the wine with 1 cup chilled white grape juice and omit the schnapps.
