Prepare ingredients
Remove any excess fat from the turkey and thinly slice or chop to bite-size pieces. Cut the avocado in half, remove the pit, scoop flesh into a bowl and set aside. Thinly slice the hot pepper, leaving seeds if you want more heat; wear gloves if preferred. Measure out egg whites and salt and pepper.
Cook egg whites
Heat a nonstick skillet over medium heat and add 1/2 tablespoon of butter or 1/2 tablespoon olive oil. When hot, pour in the egg whites and reduce heat to medium-low. Stir gently and continuously (scramble style) for 2–3 minutes until soft curds form and eggs are just set but still moist. Season with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper while cooking. Remove from heat and keep warm.
Toast & cheese
If the gluten-free bread is pre-topped with cheese, toast or grill two slices until the cheese melts and the bread is golden (about 3–4 minutes in a toaster oven or under a broiler on low, watching closely). If your bread isn’t cheesy, place the slices on a skillet over medium heat, sprinkle the 1 oz shredded cheese evenly over the slices, cover briefly (30–60 seconds) until cheese melts, then remove.
Assemble
Lay the two cheesy gluten-free bread slices on a plate. Divide the warm scrambled egg whites between the two slices, placing them on top of the cheese.
Evenly distribute the chopped or sliced turkey over the eggs on both slices.
Sprinkle the remaining 1/4 tsp kosher salt and 1/4 tsp black pepper across the assembled toasts if needed. Garnish with chopped cilantro, if using. Serve immediately.
