Prepare rolls

Slice each sandwich roll horizontally, keeping a small hinge if desired. Spread about 1/2 tablespoon softened butter on the cut interior of both top and bottom halves of each roll.

Toast the buttered rolls cut-side down in a skillet over medium heat until golden and lightly crisp, about 1–2 minutes per side. Remove and set aside, cut-side up.

Cook bacon

In a skillet over medium heat, cook bacon in a single layer until crisp, turning as needed, about 6–9 minutes depending on thickness. Transfer to a plate lined with paper towel to drain and keep warm. Reserve 1 teaspoon bacon fat for added flavor in coleslaw if desired.

If turkey is cold from the deli and you prefer warm, briefly warm slices in the bacon skillet for 20–30 seconds per side until just warmed through. Keep warm.

Make coleslaw

In a large bowl combine shredded green cabbage, red cabbage, shredded carrots, and sliced green onion. In a separate small bowl whisk together 1 cup mayonnaise, apple cider vinegar, sugar, Dijon mustard, salt, and black pepper until smooth. Pour dressing over the shredded vegetables and toss until evenly coated. Taste and adjust salt and pepper. Let sit at room temperature for 10–15 minutes for flavors to meld (or refrigerate up to 1 hour).

Make dressing

In a small bowl combine 1/2 cup mayonnaise, ketchup, prepared horseradish, Worcestershire sauce, sweet pickle relish, paprika, hot sauce, salt, and black pepper. Stir until smooth and well combined. Taste and adjust heat or sweetness as desired. Chill briefly if you like a firmer texture, or use immediately.

Prepare tomato

Slice the tomato thinly. Lightly season the tomato slices with 1/4 teaspoon salt and 1/8 teaspoon black pepper and set aside.

To assemble each Bob's Deli Roll: spread about 1 tablespoon Russian dressing on the bottom half of each toasted roll. Layer 3 ounces (about 3 slices) of warmed or cold turkey evenly across the roll. Top turkey with 2 slices of crisp bacon (break if needed to fit). Pile about 1/2 cup coleslaw on top of the bacon (allowing some dressing to drain away so the roll doesn't get soggy). Add 1 leaf of torn lettuce and 2–3 tomato slices. Spread about 1 teaspoon Russian dressing on the top half of the roll and close the sandwich.

Cut each sandwich in half crosswise if desired, secure with a toothpick, and serve immediately. Provide extra Russian dressing on the side if desired.
