Prepare chorizo

If using precooked chorizo: warm it in a small skillet over medium heat for 2–3 minutes until heated through and slightly crisp; remove and set aside. If using raw chorizo: heat 1 tsp vegetable oil in a skillet over medium heat, add crumbled chorizo, cook 5–7 minutes, stirring and breaking up pieces, until cooked through and some edges are crisp. Transfer cooked chorizo to a plate and keep warm.

Toast roll

While chorizo cooks, split the roll and butter the cut sides with 1 tsp unsalted butter. Place buttered side down in a clean skillet over medium heat and toast 1–2 minutes until golden and crisp. Remove from skillet and set aside.

Cook eggs

Lower heat to medium-low. In the same skillet (wipe excess fat if necessary, leaving a thin film), crack 2 eggs into a small bowl and whisk gently with 1 tsp water (optional for fluffier eggs). Add 1 tsp butter to skillet and pour eggs in. Season with 1 tsp salt and 1/4 tsp black pepper. Stir gently for scrambled eggs or let set and flip for fried eggs per preference. Cook until just set but still moist, about 1–2 minutes for scrambled, or 2–3 minutes for fried (longer if you prefer fully set yolks).

Assemble avocado

While eggs finish, mash 1/2 avocado in a small bowl with a squeeze of 1/4 lime (optional), a pinch of salt, and chopped cilantro if using. Mash to a spreadable consistency but leave some texture.

Layer cheese and chorizo

Place the toasted bottom half of the roll on a plate. Spoon the warm cooked chorizo onto the bottom half, spreading evenly. Sprinkle shredded cheddar (1 oz) over the hot chorizo so it melts slightly.

Add eggs and toppings

Top the melted cheddar and chorizo with the cooked eggs. Spread mashed avocado on the top half of the roll. Add 2 tbsp salsa onto the eggs (or on top of the avocado if you prefer) and dollop 1 tbsp sour cream on the salsa or roll top.

Finish and serve

Close the sandwich, press lightly, and cut in half if desired. Serve immediately while warm so cheese remains melty. Provide extra salsa or hot sauce on the side if wanted.
