Prep cheese curds

Pat the cheese curds dry with paper towels to remove excess moisture. If curds are large, cut into bite-size pieces (about 1 to 1 1/2 inches). Chill in the refrigerator for 15–20 minutes to firm up (this helps prevent excessive melting).

Set up breading station

Place the flour and cornmeal (if using) in a shallow bowl. In a second shallow bowl whisk together the eggs and milk until smooth. In a third shallow bowl combine panko, grated Parmesan, garlic powder, onion powder, smoked paprika, kosher salt, and black pepper; mix well.

Bread the curds (triple-coat for best results)

Working in small batches (6–8 curds at a time), dredge each curd in the flour mixture, shaking off excess. Dip into the egg mixture, letting excess drip off, then press into the panko mixture to coat thoroughly. For a thicker crust, repeat: dip back into the egg quickly and press into panko again. Place breaded curds on a baking sheet lined with parchment. Keep them chilled in the refrigerator while you heat the oil (this reduces melting during frying).

Heat oil

Pour oil into a heavy-bottomed pot or deep skillet to a depth of about 2 inches (roughly 2–3 cups depending on vessel). Attach a thermometer and heat to 350°F (175°C). If you don't have a thermometer, test with a small breadcrumb — it should sizzle and brown within ~30 seconds.

Fry the curds

Fry breaded cheese curds in small batches (4–6 pieces) so oil temperature stays steady. Gently lower the curds into the hot oil using a slotted spoon or spider. Fry for 1.5–2 minutes, turning once, until golden brown and crisp. Avoid overcrowding. If curds brown too quickly and leak cheese, reduce temperature by 5–10°F.

Drain and rest

Using a slotted spoon, transfer fried curds to a wire rack set over a baking sheet or onto paper towels to drain. Let rest 1–2 minutes; the interior will be gooey. Keep warm in a low oven (200°F/95°C) on the wire rack if frying additional batches.

Serve

Arrange fried cheese curds on a platter, sprinkle with chopped parsley if desired, and serve immediately with ranch dressing and lemon wedges on the side for optional brightness.
