Base — Hash Browns

Heat a 10–12 inch nonstick or cast-iron skillet over medium-high heat. Add the butter and vegetable oil and swirl until butter is melted and foaming.

Add the frozen shredded hash browns in an even layer. Press gently with a spatula. Season evenly with 1 tsp salt and 1/4 tsp black pepper.

Cook undisturbed for 5–7 minutes until the underside is deeply golden brown. Flip in sections or flip whole if possible; continue cooking another 4–6 minutes until crisp and cooked through. Reduce heat to low to keep warm if eggs are not ready.

Eggs

Crack the 3 eggs into a medium bowl. Add 2 tablespoons milk, 1/4 tsp salt, and 1/8 tsp black pepper. Whisk until well combined and slightly frothy.

In a separate 8-inch nonstick skillet, melt 1 tbsp butter over medium-low heat until foamy. Pour in the whisked eggs.

Let eggs sit undisturbed 10–15 seconds, then using a silicone spatula, gently push the set edges toward the center while tilting the pan so uncooked egg flows to the edges. Continue folding gently until eggs are softly set but still moist, about 2–3 minutes total. Remove from heat just before fully firm — residual heat will finish them.

Cheese & Sauce

If using prepared cheddar cheese sauce or pepper gravy, warm them gently in a small saucepan over low heat or microwave in 15-second bursts until pourable (about 30–45 seconds). Keep covered to retain heat.

Reserve 1/2 cup shredded cheddar for serving; the rest can be mixed into the eggs or melted over the hash browns if desired.

Three Choice Toppings (prepare and heat if needed)

Cook protein topping (if using sausage or bacon)

If using breakfast sausage or bacon, cook ahead: heat a small skillet over medium and cook sausage until browned and cooked through (~5–7 min) or bacon until crisp. Drain on paper towels and crumble or chop as needed.

Prepare vegetable toppings: dice tomatoes, slice green onions, and chop any other raw toppings. If using peppers or onions as a topping, sauté in a little oil over medium-high for 3–4 minutes until softened.

Assembly & Finish

Divide hot hash browns between serving bowls (2 cups makes about one generous bowl). Create a small well in the center of each pile.

Spoon the scrambled eggs onto the hash browns.

Scatter the 1/2 cup shredded cheddar over the eggs and hash browns so it begins to melt from the residual heat.

Top with your three chosen toppings (for example, 1/4 cup crumbled sausage, 1/4 cup diced tomato, 2 tbsp sliced green onions).

Choose a finishing sauce: drizzle 1/4 cup pepper gravy for a savory peppered finish or 1/4 cup cheddar cheese sauce for extra cheesiness. Serve the unused sauce on the side or reserve for another bowl.

Garnish with optional cilantro and hot sauce to taste. Serve immediately.
