Prepare Crab

If using lump crab, pick over for shells and finely chop into small pieces. If using imitation crab, finely chop into small, rice-sized pieces for easier filling.

Place the softened cream cheese in a medium bowl and beat with a fork or small whisk until smooth and creamy.

Add the chopped crab, sliced green onions, chopped cilantro, minced garlic, soy sauce, sesame oil, Worcestershire sauce, white pepper, sugar, and lime juice (if using). Mix until everything is evenly incorporated. Taste and adjust seasoning — add a little more soy for saltiness or lime for brightness.

Cover the bowl and chill the filling for 15–30 minutes if time allows. Chilled filling is firmer and easier to handle when assembling wrappers.

Wrappers & Assembly

Set up an assembly station: a clean work surface or cutting board, a small bowl with the beaten egg (add 1 tsp water if needed and whisk), and a plate lined with parchment for finished wontons.

Working with one wonton wrapper at a time, place it flat in a diamond orientation (one corner facing you). Spoon about 1 heaping teaspoon (about 10–12 g) of the chilled crab filling into the center of the wrapper. Do not overfill — too much filling will prevent proper sealing.

Brush the edges of the wrapper lightly with the beaten egg. To make the classic Crab Rangoon shape, bring two adjacent corners together over the filling and press to seal, then bring the remaining two corners together and press. Alternatively, gather all four corners up toward the center and pinch to seal, forming a small pouch. Ensure all seams are tightly sealed; if there are gaps, the filling can leak during frying.

Place assembled wontons seam-side down on the prepared plate. Repeat with remaining wrappers and filling. You should have about 24 wontons.

For Frying

Pour oil into a deep, heavy-bottomed pot or Dutch oven to a depth of about 2–3 inches (enough to fully submerge the wontons). Heat the oil over medium-high heat until it reaches 350°F (175°C) on a deep-fry thermometer. If you don't have a thermometer, test by dropping a small piece of wrapper into the oil — it should sizzle and brown within about 30–45 seconds.

Fry the wontons in batches (4–6 at a time depending on pot size) to avoid crowding. Carefully lower the wontons into the hot oil seam-side down. Fry, turning occasionally, until golden brown and crisp, about 2 to 3 minutes per batch.

Using a slotted spoon or spider, transfer the cooked wontons to a wire rack set over a baking sheet or to a plate lined with paper towels to drain. Let cool 1–2 minutes — filling will be hot.

Repeat with remaining wontons. Maintain oil temperature between 325–350°F (160–175°C); lower heat slightly if oil smokes or if wontons brown too quickly.

Dipping Sauce (Sweet Chili Style)

While frying, combine the sweet chili sauce, soy sauce, and rice vinegar in a small bowl. Stir until smooth. Taste and adjust: add a pinch of sugar if you want it sweeter or a splash more rice vinegar for acidity.

Sprinkle sesame seeds on top, if using. Transfer the sauce to a serving bowl.

To Serve

Arrange the hot Crab Rangoon on a platter. Serve immediately with the sweet chili dipping sauce on the side. Garnish with extra sliced green onions or cilantro if desired.
