Cook rice
Rinse the short-grain rice under cold water until the water runs clear. Combine rinsed rice, 1.75 cups water, and 1 tablespoon canola oil in a small pot. Bring to a gentle boil, then reduce heat to low, cover, and simmer 15 minutes. Remove from heat and let stand, covered, 10 minutes. Fluff with a fork and stir in 1 teaspoon sesame oil and 1 tablespoon unsalted butter; keep covered and warm.

Prep vegetables
While rice cooks, cut zucchini and yellow squash into 1/2-inch half-moons (about 1 cup each), slice carrot into thin diagonal coins (1 cup), thinly slice 1/2 cup yellow onion, trim and halve mushrooms to make ~1 cup, and cut broccoli into small florets (1 cup). Mince 2 teaspoons garlic and slice 2 tablespoons green onions for garnish.

Cook vegetables hibachi-style
Heat a large heavy skillet or flat-top griddle over medium-high heat until very hot (2–3 minutes). Add 2 tablespoons vegetable oil and swirl. Add the carrot and broccoli first; stir-fry 1–2 minutes to start softening. Add the onion, mushrooms, zucchini, and yellow squash; continue to stir and toss for 3–4 minutes until vegetables are tender-crisp and have light browning. Make a small well in the center, add the minced garlic, and let it sizzle 10–15 seconds, then toss everything together. Season with 3/4 teaspoon salt and 1/2 teaspoon black pepper, tasting and adjusting as needed.

Combine vegetables with rice (optional fried rice style)
If you prefer the hibachi lunch to include seasoned fried rice: push vegetables to one side of the skillet, add a touch more oil or 1 tablespoon butter to the empty side, and add the cooked rice. Flatten rice and let it sear 1 minute, then toss and combine with vegetables. Stir until evenly mixed and heated through. Adjust salt and pepper to taste.

Make the hibachi-style sauce: whisk together 4 tablespoons low-sodium soy sauce, 1 tablespoon mirin (or dry sherry), 1 teaspoon rice vinegar, 1 teaspoon granulated sugar, 1 teaspoon grated ginger, and 1 teaspoon toasted sesame seeds in a small bowl. Add 1 teaspoon fresh lemon juice and 1/4 teaspoon red pepper flakes if using. Taste and adjust balance: more sugar for sweetness, more soy for salt, or extra vinegar for brightness.

Finish vegetables with sauce: when vegetables (or vegetable-rice mix) are nearly done, drizzle about half of the sauce (2–3 tablespoons) over them in the skillet and toss to glaze for 30–60 seconds. Reserve the remaining sauce to serve on the side or drizzle at plating.

Plate and garnish: divide the rice and vegetables between two lunch portions (see servings). Dot each portion with 1/2 tablespoon ginger butter or additional butter, and garnish with sliced green onions and a sprinkle of toasted sesame seeds. Serve lemon wedge on the side and the reserved sauce in a small ramekin.

Serving and storage: serve hot. Leftovers keep in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet with a splash of water or oil to restore texture.
