    Prep

    Pat the chicken dry and cut into 1-inch pieces if not already done. Thinly slice the onion, zucchini, carrot, mushrooms and separate the white and green parts of the scallions. Mince garlic and grate ginger. Have hot cooked rice ready in a covered bowl so it stays warm.

    Season Chicken

    In a medium bowl toss the chicken with 1 tbs soy sauce, 1/2 tsp salt and 1/2 tsp black pepper. Let sit 5–10 minutes while you heat the pan.

    Cook Vegetables

    Heat 1 tbs vegetable oil in a large heavy skillet or flat griddle over medium-high heat until shimmering. Add the onion and carrot and cook, stirring occasionally, 2–3 minutes until beginning to soften. Add zucchini and mushrooms and continue to cook 2–3 minutes until vegetables are tender-crisp. Push vegetables to one side of the pan (or transfer to a plate) and sprinkle with a pinch of salt and a few grinds of pepper.

    Sear Chicken

    Add the remaining 1 tbs vegetable oil and 1 tbs butter to the empty side of the pan and let it melt and heat until foaming. Spread the chicken out in a single layer and sear without moving 2 minutes to get color, then stir and continue to cook 3–4 minutes until cooked through (internal temp 165°F / 74°C) and caramelized. Add minced garlic and grated ginger during the last 30–45 seconds and toss to coat.

    Combine & Sauce

    Push the chicken to the center, fold the cooked vegetables into the chicken. Add remaining 2 tbs soy sauce and mirin (if using), toss to combine and reduce for about 1 minute so sauce coats everything. Taste and adjust with remaining salt and pepper if needed. Stir in sesame oil and the white parts of the sliced scallions.

    Finish with Garlic Butter

    In a small pan or off to the side, melt 2 tbs butter with 1 minced garlic clove over low heat until fragrant (30 seconds). Stir in 1 tsp soy sauce and 1 tsp lemon juice. Pour this garlic butter over the chicken and vegetables and toss once to glaze.

    Plate

    Divide 2 cups hot cooked rice between two lunch plates. Spoon the chicken and vegetable mixture alongside the rice, garnish with bean sprouts and the green parts of the scallions. Serve with lemon wedges on the side.

Ginger Soy Dipping Sauce

    Whisk together 4 tbs soy sauce, 1 tbs rice vinegar, 1 tsp sugar, 1 tsp grated fresh ginger, 1 tsp sesame oil and 1 tsp red pepper flakes in a small bowl until the sugar dissolves. Taste and adjust: add a splash more rice vinegar for brightness or more sugar to mellow the salt. Serve in a small ramekin alongside the plated hibachi for dipping.

    This recipe makes two hibachi lunch portions. For authentic hibachi texture, cook over high heat and avoid overcrowding the pan; work in batches if needed. Leftovers keep 2 days refrigerated; reheat gently in a skillet to preserve texture.
