Prep and marinate beef
If your steak is not already very thin, partially freeze for 20–30 minutes for easier slicing. Using a sharp knife, slice the steak into 12 long thin strips about 3–4 inches wide and 5–6 inches long. Lay strips flat and, if needed, gently pound to even thickness (about 1/8–1/4 inch).

Make the marinade/ glaze: In a shallow bowl combine 1 tbs soy sauce, 1 tbs mirin, 1 tbs sake, 1 tsp grated ginger, 1 tsp sugar and 1 tsp sesame oil. Stir until sugar dissolves.

Reserve 1 tablespoon of the marinade for brushing while cooking. Place the beef strips in the remaining marinade, turning to coat. Marinate at room temperature for 10–15 minutes (or up to 30 minutes in the fridge).

Trim green onions to 3–4 inch lengths. Pat beef strips dry lightly with paper towel, leaving just a little marinade to help adhesion.

Working one strip at a time, lay 2–3 green onion stalks along one short end of the beef strip and roll tightly to enclose the scallions, creating a neat cylinder. Secure with a toothpick if necessary (remove before serving). Repeat to make 10–12 rolls.

Heat a heavy skillet or grill pan over medium-high heat. Add 1 tsp neutral oil and swirl to coat. When oil is shimmering, place rolls seam-side down and sear, turning every 1–1.5 minutes to get even color and cook through (about 6–8 minutes total). Brush rolls with reserved marinade in the last 1–2 minutes of cooking to create a glossy glaze.

Transfer rolls to a cutting board and let rest 2 minutes. Slice each roll into 3 pieces on the bias. Sprinkle toasted sesame seeds over the sliced negimaki.
Rice

Rinse 1 cup short-grain rice under cold water, swirling and draining until the water runs mostly clear (3–4 rinses). Drain in a fine mesh sieve for 10 minutes.

Combine rinsed rice and 1.1 cups water in a small saucepan or rice cooker. If using a stovetop, bring to a gentle boil over medium-high heat, reduce to the lowest simmer, cover and cook 12–14 minutes without lifting the lid. Remove from heat and let rest covered for 10 minutes.

Fluff rice with a fork and gently fold in 1 tsp rice vinegar and a pinch of salt. Keep warm until packing the lunch box.
Pickled Cucumber Salad

Thinly slice the cucumber (use a mandoline or a sharp knife). Sprinkle a pinch of salt over the slices and let sit 5 minutes, then gently squeeze out excess water using your hands or kitchen towel.

In a small bowl combine 2 tsp rice vinegar, 1 tsp sugar and 1/2 tsp toasted sesame oil. Stir until sugar dissolves. Toss the drained cucumber slices in the dressing and let sit 5–10 minutes to pickle lightly.
Assemble Lunch Box

Portion the warm rice into the lunch box compartment (about half of the box). Arrange the sliced beef negimaki pieces next to the rice in a neat row or fan, reserving any glaze on the cutting board to brush on top if desired.

Place a small portion of pickled cucumber salad in a separate compartment or silicone cup to prevent sogginess. Add 2 tbs pickled ginger and a sprinkle of shredded nori if using.
