Method
Prepare Sushi Rice

Cook the Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions.

Season the Rice
While the rice is still warm, mix together rice vinegar, sugar, and salt in a small bowl until dissolved. Gently fold this mixture into the cooked rice. Set aside to cool.
Prepare Filling

Prepare Shrimp
In a bowl, season shrimp with salt and black pepper. Dredge shrimp in flour, dip in beaten egg, and coat with panko breadcrumbs.

Deep Fry Shrimp
Heat vegetable oil in a deep saucepan over medium-high heat. Fry the shrimp until golden brown and cooked through, about 3-4 minutes. Remove and drain on paper towels.
Assemble the Roll

Lay Out Ingredients
On a bamboo sushi mat, spread a layer of sushi rice evenly, leaving a small border at the top.

Add Filling
Place the fried shrimp, crab meat, and spicy tuna mix in a line across the center of the rice.

Roll the Sushi
Using the mat, roll the sushi tightly from the bottom to the top, applying gentle pressure to form a firm roll.

Top the Roll
Place the unagi, hamachi, and avocado slices on top of the rolled sushi. Drizzle with unagi sauce and mayonnaise. Sprinkle masago over the top.

Slice the Roll
Using a sharp knife, slice the roll into 8 equal pieces. Wipe the knife with a damp cloth between cuts for clean edges.
