Method
Tempura Preparation
- 1
Prepare Tempura Batter
In a bowl, combine all-purpose flour, cornstarch, and baking powder. In a separate bowl, whisk together cold water and egg. Gradually mix the wet ingredients into the dry ingredients until just combined; do not overmix.
- 2
Heat Oil
In a deep frying pan or pot, heat vegetable oil over medium heat until it reaches 350°F (175°C). You can test the temperature by dropping a small amount of batter into the oil; it should sizzle immediately.
Cooking Vegetables and Prawns
- 3
Prepare Vegetables and Prawns
Dip the prawns, broccoli, carrots, yams, and zucchini into the tempura batter, ensuring they are well coated.
- 4
Fry Ingredients
Carefully place the battered prawns and vegetables into the hot oil, working in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Miso Soup Preparation
- 5
Make Miso Soup
In a pot, bring dashi stock to a gentle simmer. In a small bowl, dissolve miso paste in a ladle of hot dashi stock, then stir it back into the pot. Add cubed tofu and simmer for about 5 minutes.
- 6
Finish Soup
Remove the soup from heat and stir in sliced green onions just before serving.
