Method

Tempura Preparation

    Prepare the Tempura Batter

    In a large bowl, combine all-purpose flour, cornstarch, baking powder, and cold water. Mix until just combined, being careful not to overmix. Add ice cubes to keep the batter cold.

    Tempura Vegetables

    Heat oil in a deep frying pan. Dip each vegetable slice into the batter and carefully lower into the hot oil. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Salmon Teriyaki Preparation

    Make Teriyaki Sauce

    In a small saucepan, combine soy sauce, mirin, sugar, and sesame oil. Heat over medium heat until the sugar dissolves. Set aside.

    Cook Salmon

    Heat a skillet over medium heat. Cook salmon fillets skin-side down for about 4-5 minutes, then flip and pour teriyaki sauce over the top. Cook for another 3-4 minutes or until cooked through.

Salad Preparation

    Prepare the Salad

    In a bowl, combine mixed greens, cherry tomatoes, and cucumber. Drizzle with olive oil and balsamic vinegar. Season with salt and black pepper to taste. Toss to combine.

Miso Soup Preparation

    Make Miso Soup

    In a pot, heat dashi stock until simmering. In a small bowl, mix miso paste with a little hot dashi stock until smooth, then stir it back into the pot. Add tofu and sliced green onions. Simmer for 5 minutes.

Rice Preparation

    Cook the Rice

    Rinse short-grain rice under cold water until the water runs clear. In a pot, combine rice and water, bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked. Fluff with a fork.
