Preparing the Sweet Potato

    Cook Sweet Potatoes

    Peel and cut the sweet potatoes into thin strips. Boil them in salted water until fork-tender, approximately 10-15 minutes. Drain and let them cool.

    Prepare Tempura Batter

    In a bowl, combine the tempura batter mix with cold water. Stir until smooth, ensuring there are no lumps.

    Fry Sweet Potatoes

    Heat oil in a deep frying pan over medium-high heat. Dip the cooled sweet potato strips in the tempura batter, then carefully place them in the hot oil. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Preparing Sushi Rice

    Cook Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions.

    Once the rice is cooked, transfer it to a bowl. Mix together rice vinegar, sugar, and salt. Pour this mixture over the rice and gently fold to combine.

Assembling the Roll

    Prepare Nori Sheets

    Lay a nori sheet shiny side down on a bamboo sushi mat.

    Spread the Rice

    Wet your hands with water to prevent sticking. Take a handful of seasoned sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

    Add Sweet Potato

    Place a few tempura sweet potato strips horizontally across the center of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, pressing lightly to form a tight roll. Seal the edge with a little water.

    Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for cleaner slices.
