Method

Preparation of Sushi Rice

  1. 1

    Cook the Sushi Rice

Rinse 2 cups of sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions. Once cooked, let it cool slightly.

  2. 2

    Season the Rice

In a small bowl, mix together 2 tablespoons of rice vinegar, 1 tablespoon of sugar, and 1 teaspoon of salt until dissolved. Fold this mixture into the cooked sushi rice while it's still warm. Allow the rice to cool to room temperature.

Prepare Filling

  1. 3

    Prepare the Crab Filling

In a bowl, gently mix 200g of crab meat with a pinch of salt and set aside.

  2. 4

    Slice the Avocado

Cut the avocado in half, remove the pit, and slice it into thin strips.

Prepare Salmon Topping

  1. 5

    Bake the Salmon

Preheat the oven to 180°C (350°F). Place 200g of salmon fillet on a baking sheet, season with salt, and bake for 12-15 minutes until cooked through. Once done, flake the salmon into small pieces.

  2. 6

    Make the Creamy Sauce

In a small bowl, combine 2 tablespoons of mayonnaise with 1 tablespoon of sriracha sauce. Mix well and set aside.

Assemble the Roll

  1. 7

    Roll the Sushi

Place a bamboo sushi mat on a flat surface. Lay a nori sheet shiny side down on the mat. With wet hands, spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.

  2. 8

    Add Filling

In the center of the rice, layer the crab meat and avocado slices.

  3. 9

    Roll it Up

Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly. Roll until the nori edge sticks to the rice.

  4. 10

    Cut the Roll

Using a sharp, wet knife, cut the roll into 6-8 pieces.

Finish and Serve

  1. 11

    Top the Roll

Place the pieces of sushi on a serving plate. Top each piece with flaked baked salmon, a drizzle of the creamy sauce, and a sprinkle of masago and sesame seeds.

  2. 12

    Garnish and Serve

Serve with soy sauce, pickled ginger, and wasabi if desired.
