Preparation of Sushi Roll

Cook Sushi Rice
Rinse 2 cups of sushi rice under cold water until the water runs clear. Cook according to package instructions, usually using a rice cooker or stove with 2.5 cups of water. Once cooked, let it cool slightly.

Prepare Ingredients
While the rice is cooking, prepare the other ingredients. Slice the cucumber into thin strips. Boil or steam the ebi (shrimp) until they turn pink and are cooked through, then cool them. Prepare the soft shell crab by lightly frying it until crispy.

Assemble the Sushi Roll
Lay a bamboo sushi mat on a flat surface. Place a nori sheet on the mat, shiny side down. Wet your hands and spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge. Arrange the soft shell crab, cucumber strips, ebi, and bean sprouts in a line across the center of the rice.

Roll the Sushi
Using the sushi mat, carefully roll the nori over the filling, tucking it tightly as you go. Continue rolling until you reach the bare edge of the nori. Wet the edge with a little water to seal the roll.

Slice the Roll
Using a sharp knife, slice the roll into 6-8 pieces. Clean the knife with a damp cloth between cuts to ensure clean edges.

Prepare Toppings
In a small bowl, mix the masago and spicy sauce together. This will serve as a topping and dipping sauce for the rolls.

Arrange the sliced spider rolls on a plate. Drizzle the masago and spicy sauce mixture over the top or serve it on the side. Enjoy your delicious spider roll!
