Method
Preparation of Soft Shell Crab
- 1
Cleaning the Crab
Rinse the soft shell crabs under cold water and pat them dry with paper towels.
- 2
Frying the Crab
Heat vegetable oil in a deep pan to 350°F (175°C). Carefully place the crabs in the hot oil and fry for about 4-5 minutes or until they are golden brown and crispy. Remove from oil and drain on paper towels.
Preparation of Spicy Sauce
- 3
Mixing the Sauce
In a bowl, combine the mayonnaise, sriracha sauce, lemon juice, sesame oil, and salt. Mix well until the ingredients are fully incorporated.
Assembly of the Roll
- 4
Preparing the Ingredients
Slice the avocado thinly and chop the green onions into small pieces.
- 5
Rolling the Ingredients
Lay a sheet of soy paper on a sushi mat. On the lower third of the paper, place a few slices of avocado, a couple of fried soft shell crabs, chopped green onions, and a spoonful of masago. Drizzle a bit of spicy sauce over the filling.
- 6
Forming the Roll
Carefully roll the soy paper away from you, tucking in the filling as you go to form a tight roll. Use a bit of water to seal the edge of the soy paper.
- 7
Cutting the Roll
Using a sharp knife, cut the roll into bite-sized pieces. Wipe the knife with a damp cloth between cuts to ensure clean slices.
