Prepare Lobster

Cook the Lobster
Bring a large pot of salted water to a boil. Add the lobster tails and cook for about 8-10 minutes or until they turn bright red. Remove and let them cool.

Prepare Tempura Batter
In a mixing bowl, combine tempura batter mix with cold water according to package instructions until smooth.

Fry Lobster
Once the lobster is cooled, remove the meat from the shells and cut into bite-sized pieces. Heat vegetable oil in a deep pan to 350°F (175°C) and dip lobster pieces into the tempura batter. Fry until golden brown and crispy, about 2-3 minutes. Drain on paper towels and set aside.
Make Spicy Sauce

Combine Ingredients
In a small bowl, mix together mayonnaise, Sriracha sauce, and lemon juice until well combined. Adjust spiciness according to taste.
Make Crab Mixture

Mix Crab and Tobiko
In a separate bowl, carefully mix the crab meat with the tobiko. Add a little bit of the spicy sauce to enhance the flavor.
Assemble Rolls

Layer the Ingredients
Lay a sheet of soy paper on a clean surface. Place a generous amount of the fried lobster pieces along the center of the paper.

Add Crab Mixture
Spoon the crab mixture over the lobster pieces. Drizzle with more spicy sauce if desired.

Roll It Up
Carefully roll the soy paper around the filling, tucking in the edges as you go to create a tight roll. Repeat with remaining ingredients.
