Method

Preparing Sushi Rice

    Rinse the Rice

    Rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    Combine the rinsed rice and 1.25 cups of water in a rice cooker or pot. Cook according to the rice cooker instructions or bring to a boil, reduce heat, cover, and simmer for 20 minutes. Let it sit covered for 10 minutes after cooking.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Fold this mixture into the cooked rice gently. Let the rice cool to room temperature.

Assembling the Sushi Roll

    Prepare the Nori

    Place a bamboo sushi mat on a flat surface and lay a sheet of nori, shiny side down.

    Add Rice

    Wet your hands to prevent sticking, then spread about 1/4 of the sushi rice evenly over the nori, leaving a 1-inch border at the top.

    Add Fillings

    In the center of the rice, place a line of spicy tuna, sliced avocado, and thinly sliced jalapeño.

    Roll It Up

    Using the bamboo mat, carefully roll the sushi away from you, pressing gently to form a tight cylinder. Seal the edge of the nori with a little water.

    Repeat this process with the remaining ingredients to make additional rolls.

Frying the Rolls

    Prepare Batter

    In a bowl, mix the all-purpose flour and cornstarch. Slowly add ice water, whisking until you achieve a smooth batter.

    In a deep pot or fryer, heat vegetable oil to 350°F (175°C).

    Batter and Fry Rolls

    Dunk each sushi roll in the batter, allowing excess to drip off. Carefully place in the hot oil and fry until golden brown, about 5-7 minutes. Remove and drain on paper towels.

Serving the Roll

    Slice the fried sushi rolls into bite-sized pieces using a sharp knife.
