Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a pot, bring to a boil, then reduce to low heat, cover, and simmer for 20 minutes. Once done, remove from heat and let it sit covered for 10 minutes. Stir in rice vinegar and let it cool to room temperature.

Prepare Smoked Salmon
If needed, slice the smoked salmon into strips that will fit inside the rolls.
Assembling the Rolls

Lay Out the Nori
Place a bamboo sushi mat on a flat surface and place one sheet of nori, shiny side down, on the mat.

Spread the Rice
Wet your hands with water to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving about an inch at the top free of rice.

Add Fillings
In the center of the rice, place a line of cream cheese, followed by slices of smoked salmon, and then add the avocado slices.

Roll the Sushi
Using the sushi mat, carefully lift the edge of the mat and roll the nori over the fillings, applying gentle pressure to form a tight roll. Roll it until the free edge of the nori is reached, then wet it with a little water to seal the roll.

Slice the Roll
With a sharp, wet knife, slice the roll into bite-sized pieces. Clean the knife between cuts for cleaner slices.
Finishing Touches

Add Sesame Seeds
Sprinkle sesame seeds over the sliced rolls for garnish.
