Prepare the Tempura Batter

Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Whisk together until fully combined.

Add Water
Gradually add the ice-cold water to the dry mixture, stirring gently until just combined. Be careful not to overmix; the batter should be lumpy.
Prepare the Shrimp

Prep the Shrimp
Ensure the prawns are peeled and deveined. Pat them dry with paper towels to remove excess moisture.
Fry the Tempura

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Coat and Fry
Dip each prawn into the tempura batter, allowing any excess to drip off. Carefully place the battered prawn into the hot oil. Fry for about 2-3 minutes, or until golden brown and crispy.

Drain and Serve
Using a slotted spoon, remove the tempura prawns from the oil and drain on paper towels. Serve immediately with dipping sauce of your choice.
