Rice Preparation

    Prepare Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions, usually with a 1:1 ratio of rice to water. Once cooked, let it cool slightly.

Roll Assembly

    Assemble the Roll

    Place a nori sheet shiny side down on a bamboo sushi mat. Wet your hands and take a handful of sushi rice, spreading it evenly over the nori, leaving about 1 inch at the top edge. Layer crab meat, sliced avocado, cucumber sticks, and cream cheese in the center. Roll it tightly using the mat, applying slight pressure to keep the roll compact. Seal the edge with a little water.

Frying

    Prepare for Frying

    In a bowl, mix the tempura batter mix with water until smooth. Heat vegetable oil in a deep pot over medium-high heat until it reaches 350°F (175°C).

    Fry the Roll

    Slice the assembled roll into bite-sized pieces. Dip each piece into the tempura batter, allowing excess to drip off. Carefully place the battered pieces in the hot oil, frying in batches until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Sauce Preparation

    Make Spicy Mayo

    In a small bowl, mix mayonnaise and Sriracha sauce until well combined. Adjust the spiciness to taste.

Serving

    Serve the Roll

    Drizzle unagi sauce over the fried rolls and serve with spicy mayo on the side for dipping.
