Saba Shioyaki

    Prepare the Mackerel

    Sprinkle the mackerel fillets with sea salt on both sides. Let them sit for about 10-15 minutes to absorb the salt.

    Grill the Mackerel

    Preheat a grill or grill pan over medium heat. Grill the fillets for about 5-7 minutes on each side until the skin is crispy and the fish is cooked through.

    Serve

    Serve the grilled mackerel with lemon slices on the side.

Tonkatsu

    Prepare the Pork

    Season the pork loin pieces with salt and black pepper on both sides.

    Set Up Breading Station

    Place the flour in one shallow dish, beat the egg in another dish, and place the panko bread crumbs in a third dish.

    Bread the Pork

    Dredge each pork piece in flour, dip it into the egg, and then coat it with panko bread crumbs, pressing gently to ensure they adhere.

    Fry the Tonkatsu

    In a deep frying pan, heat vegetable oil over medium-high heat. Fry the breaded pork for about 5-6 minutes on each side until golden brown and cooked through. Drain on paper towels.

Salad

    Prepare the Salad

    In a large bowl, combine mixed greens, halved cherry tomatoes, and sliced cucumber. Toss gently.

    Dress the Salad

    Drizzle Japanese sesame dressing over the salad to taste and toss again before serving.

Rice

    Rinse the Rice

    Rinse the Japanese short-grain rice under cold water until the water runs clear.

    Cook the Rice

    In a rice cooker or pot, combine rinsed rice and water. Cook according to rice cooker instructions or bring to a boil, then reduce to a simmer, cover, and cook for 18-20 minutes.

Miso Soup

    Prepare the Broth

    In a pot, bring 4 cups of water to a boil.

    Add Miso Paste

    Once boiling, add miso paste and stir until dissolved.

    Add Tofu and Seaweed

    Add cubed tofu and seaweed to the pot and simmer for 2-3 minutes.

  4. 15

    Finish with Green Onions

    Remove from heat and stir in sliced green onions before serving.
