Broth Preparation

    Prepare the Broth

    In a large pot, combine the pork bones and water. Bring to a boil over high heat, then reduce to a simmer and cook for 2-3 hours, skimming any foam that rises to the top.

    Add Flavorings

    After simmering, add soy sauce, mirin, garlic, ginger, and green onions to the pot. Continue to simmer for an additional 30 minutes.

    Strain the Broth

    Once the broth is flavorful, strain it through a fine-mesh sieve into another pot, discarding the solids. Keep the broth warm over low heat.

Noodle and Topping Preparation

    Cook the Ramen Noodles

    In a separate pot, bring water to a boil and cook the ramen noodles according to package instructions. Drain and set aside.

    Boil the Eggs

    In a small pot, bring water to a boil and gently add the eggs. Boil for 7 minutes for a soft-boiled egg. Remove eggs and place them in an ice bath to cool. Once cooled, peel the eggs and slice in half.

    Sauté the Vegetables

    In a skillet, heat sesame oil over medium heat. Add bok choy and mushrooms, sautéing until tender, about 5-7 minutes.

Assembly

    Assemble the Ramen

    In serving bowls, place a portion of the cooked ramen noodles. Ladle the hot broth over the noodles, and top with sautéed bok choy, mushrooms, halved eggs, and nori strips.

    Finish with Oils

    Drizzle chili oil over each bowl to taste and serve immediately.
