Dough Preparation

Make the Dough
In a large bowl, mix the all-purpose flour and salt. Gradually add the hot water while stirring until a dough forms.

Knead the Dough
Transfer the dough onto a floured surface and knead for about 5-10 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.

Prepare the Filling
In a mixing bowl, combine the ground pork, green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper. Mix thoroughly until well combined.
Assembly

Form the Gyoza
After resting, divide the dough into small pieces (about 1 inch). Roll each piece into a thin circle (about 3 inches in diameter). Place about 1 tablespoon of the filling in the center of each circle. Fold the dough over the filling and pinch to seal, creating pleats if desired.
Cooking

Pan Fry the Gyoza
Heat the cooking oil in a large skillet over medium heat. Place the gyoza in the skillet and fry for about 2-3 minutes until the bottoms are golden brown.

Steam the Gyoza
Carefully add 1 cup of water to the skillet and cover immediately. Allow the gyoza to steam for about 5-7 minutes until the water has evaporated and the gyoza are cooked through.

Serve
Transfer the gyoza to a serving plate and serve with soy sauce for dipping.
