Method
Prepare Sushi Rice

Rinse the Rice
Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a saucepan, combine the rinsed sushi rice and 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 18 minutes. Remove from heat and let it sit covered for an additional 10 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Fluff the cooked rice and gently fold in the vinegar mixture. Let it cool to room temperature.
Prepare the Inside Filling

Prepare the Shrimp
Deep fry the shrimp in hot oil until golden brown and crispy. Drain on paper towels.

Mix the Filling
In a bowl, combine the deep fried shrimp, crab meat, and lemon juice. Mix well and set aside.
Assemble the Roll

Lay the Nori
Place a sheet of nori on a bamboo sushi mat, shiny side down.

Add the Rice
Wet your hands to prevent sticking, and spread a thin layer of sushi rice over the nori, leaving a small border at the top.

Add the Filling
Place a line of the shrimp and crab mixture along the bottom edge of the rice.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly. Roll until the border of nori is reached, then wet the edge with water to seal.
Top the Roll

Slice the Avocado
Cut the avocado in half, remove the pit, and slice thinly.

Prepare the Salmon
Slice the salmon into thin pieces.

Add Toppings
Place the sliced avocado and salmon on top of the rolled sushi. Drizzle with seared special sauce and unagi sauce. Sprinkle tempura bits generously on top.
Serve the Roll

Cut the Roll
Using a sharp knife, cut the sushi roll into bite-sized pieces. Wipe the knife with a damp cloth between cuts to keep them clean.

Serve the New Osaka Roll with soy sauce and wasabi on the side.
