Prepare the Filling
If using store-bought sweet red bean paste, ensure it is smooth and ready. If making from scratch, cook adzuki beans until soft, then mash and mix with sugar to taste.
Make the Mochi Dough

Cook the Dough
Transfer the mixture to a microwave-safe bowl and cover with plastic wrap. Microwave for 1 minute on high, stir, then microwave for another 1 minute. Stir again and microwave for an additional 30 seconds. The dough should be sticky and slightly translucent.

Cool the Dough
Allow the dough to cool for a few minutes until it is handleable.
Shape the Mochi

Prepare the Surface
Dust a clean surface with cornstarch to prevent sticking.

Form the Mochi
Divide the mochi dough into small portions (about 1.5 inches in diameter). Flatten each piece in your hand and place about 1 tablespoon of red bean paste in the center. Carefully fold the edges of the dough over the filling and pinch to seal.

Dust with Cornstarch
Roll each filled mochi ball in cornstarch to prevent them from sticking together.
