Prepare Sushi Rice

Cook the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions, usually in a rice cooker or on the stovetop with the appropriate amount of water.

Season the Rice
Once the rice is cooked, transfer it to a large bowl. Mix the rice vinegar, sugar, and salt in a separate bowl until dissolved, then gently fold it into the warm rice. Allow the rice to cool to room temperature.
Prepare Filling

Prepare the Shrimp and Crab
Deep fry the shrimp until golden brown and crispy. If using pre-cooked crab meat, ensure it's drained and flaked. If raw, cook it along with the shrimp until done.
Assemble the Roll

Lay Out the Nori
Place a sheet of nori, shiny side down, on a bamboo sushi mat.

Add Sushi Rice
Wet your hands with water to prevent sticking, and spread a thin layer of sushi rice over the nori, leaving about 1 inch of nori uncovered at the top.

Add the Filling
In the center of the rice, place the deep-fried shrimp and flaked crab meat evenly.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge of the nori with a little water.
Prepare Toppings

Slice the Avocado
Cut the avocado in half, remove the pit, and slice it thinly.

Prepare the Top Layer
Cut the unagi into thin slices and prepare your unagi sauce and mayo sauce in small bowls.
Finish the Roll

Add Toppings
Place the sliced unagi on top of the sushi roll. Arrange the avocado slices beautifully on top, drizzle with unagi sauce and mayo sauce, and sprinkle tempura bits for crunch.

Slice the Roll
Using a sharp, wet knife, slice the roll into 8 pieces. Clean the knife between cuts for neat slices.
