Prepare the Dumpling Filling

Mix the Ingredients
In a large mixing bowl, combine the ground pork, chopped cabbage, grated carrot, spring onion, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper. Mix thoroughly until well combined.
Make the Dumpling Wrappers

Prepare the Dough
In another bowl, mix the all-purpose flour and salt. Gradually add water and knead the mixture into a smooth dough. Cover with a damp cloth and let it rest for 30 minutes.

Roll Out the Dough
After resting, divide the dough into small balls. Roll each ball into a thin circle, about 10 cm in diameter. Keep them covered with a damp cloth to prevent drying out.
Assemble the Gyoza

Fill the Wrappers
Place a small spoonful of the filling in the center of each wrapper. Moisten the edges with water, fold in half, and pinch to seal, creating pleats as desired.
Cook the Gyoza

Pan-Fry the Gyoza
Heat vegetable oil in a non-stick frying pan over medium heat. Place the gyoza in the pan and cook for 2-3 minutes until the bottoms are golden brown.

Steam the Gyoza
Add water to the pan (carefully) and cover immediately. Steam for about 5-7 minutes until the water has evaporated and the gyoza are cooked through.

Transfer the gyoza to a serving plate and serve hot with dipping sauce of your choice, such as soy sauce or vinegar.
