Calamari
Dipping Sauce
Method
Preparing the Calamari
- 1
Clean and Slice Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels. Ensure they are thoroughly dry to ensure the batter adheres well.
- 2
Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and paprika. Mix well.
- 3
Add Water
Gradually add the cold water to the dry ingredients, whisking until smooth. The batter should be thick but pourable.
Frying the Calamari
- 4
Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).
- 5
Batter the Calamari
Dip each calamari ring into the batter, ensuring it is fully coated.
- 6
Fry the Calamari
Carefully place the battered calamari rings into the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy.
- 7
Drain and Serve
Once cooked, remove the calamari from the oil and place on a plate lined with paper towels to drain excess oil. Serve hot.
Preparing the Dipping Sauce
- 8
Mix the Sauce
In a small bowl, combine the mayonnaise, Sriracha sauce, lemon juice, and garlic powder. Mix until smooth and well combined.
- 9
Serve
Serve the dipping sauce alongside the fried calamari for a delicious accompaniment.
