    In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper until well combined.

    Gradually add the cold water to the dry ingredients while whisking until the batter is smooth and free of lumps.

Frying

    In a deep pot or large frying pan, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

    Dip each calamari ring into the batter, ensuring it is evenly coated.

    Carefully place the coated calamari rings into the hot oil, working in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown.

    Using a slotted spoon, remove the fried calamari from the oil and place them on a plate lined with paper towels to drain excess oil.
