Preparation of Potatoes

    Peeling and Cutting Potatoes

    Start by peeling the Russet potatoes. After peeling, cut each potato into thin strips, about 1/4 inch thick. Place the cut potato strips into a large bowl of cold water to prevent them from browning.

    Soaking Potatoes

    Let the potato strips soak in cold water for at least 30 minutes. This helps to remove excess starch, resulting in crispier fries.

    Heating the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat to 350°F (175°C). Use a thermometer to check the oil temperature.

    After soaking, drain the potato strips and pat them dry with paper towels to remove excess moisture.
