Prepare Sushi Rice

Rinse and Cook Rice
Rinse 2 cups of sushi rice under cold water until the water runs clear. Combine the rinsed rice with 2.5 cups of water in a rice cooker or pot. Cook according to the rice cooker instructions or bring to a boil, then reduce to a simmer, cover, and cook for 20 minutes.

Season Rice
Once cooked, let the rice sit covered for 10 minutes. In a small bowl, mix together 1 tablespoon of rice vinegar, 1 tablespoon of sugar, and 0.5 teaspoon of salt. Gently fold this mixture into the warm rice and let it cool.

Assemble the Roll

Lay Nori
Place a sheet of nori on a bamboo sushi mat, shiny side down.

Spread Rice
Wet your hands to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

Roll Sushi
Using the bamboo mat, carefully roll the sushi away from you, tucking the filling as you go. Continue rolling until the nori is sealed.

Top with BBQ Eel
Slice the rolled sushi into 8 pieces. Arrange the BBQ eel on top of the sushi pieces.

Drizzle Eel Sauce
Drizzle the eel sauce over the sushi rolls and sprinkle with sesame seeds if desired.
