Prepare Sushi Rice

Rinse Rice
Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

Cook Rice
Combine the rinsed rice and water in a rice cooker and cook according to the rice cooker's instructions.

Season Rice
In a small saucepan, heat rice vinegar, sugar, and salt over low heat until dissolved. Once rice is cooked, transfer to a large bowl and gently fold in the vinegar mixture. Let it cool to room temperature.

Prepare Surimi
Shred the surimi into smaller pieces to make it easier to roll.
Assemble Rolls

Prepare Nori
Lay a sheet of nori, shiny side down, on a bamboo sushi mat.

Add Rice
Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

Roll Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly to form a tight roll.

Cut the Roll
Use a sharp knife to slice the roll into 6-8 pieces, wiping the knife with a damp cloth after each cut to prevent sticking.
Prepare Batter and Fry

Make Batter
In a bowl, mix together flour, cornstarch, baking powder, and salt. Gradually add cold water until you achieve a smooth batter.

Heat Oil
In a deep pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat and Fry
Dip each sushi roll in the batter, allowing excess to drip off, then carefully lower it into the hot oil. Fry until golden brown, about 2-3 minutes per side.

Drain and Cool
Remove the rolls from the oil and place them on a plate lined with paper towels to drain excess oil.

Arrange the deep-fried CA rolls on a serving platter and serve with unagi sauce on the side for dipping.
