    Cook the Potatoes

    Peel the potatoes and cut them into chunks. Place them in a large pot of salted water and bring to a boil. Cook for about 15-20 minutes, or until the potatoes are fork-tender. Drain and let them cool for a few minutes.

    In a large mixing bowl, mash the cooked potatoes with a potato masher until smooth. Ensure there are no lumps.

    Add cornstarch, salt, black pepper, and any optional ingredients (green onions, grated carrot) to the mashed potatoes. Mix well until all ingredients are combined.

    Shape the Mixture

    Using your hands, take a small amount of the potato mixture and form it into a patty shape. Repeat until all the mixture is shaped into patties.

    Coat with Panko

    If using panko breadcrumbs, gently coat each patty with panko, ensuring an even layer on both sides.

    Heat the Oil

    In a deep frying pan or skillet, heat the cooking oil over medium heat until hot.

    Carefully place the patties in the hot oil, frying in batches if necessary. Cook for about 3-4 minutes on each side, or until golden brown and crispy.

    Once cooked, remove the croquettes from the oil and place them on a paper towel-lined plate to drain excess oil. Serve warm.
