Method
Chicken Teriyaki

Prepare the Marinade
In a bowl, whisk together soy sauce, mirin, brown sugar, sesame oil, cornstarch, and water until well combined.

Marinate the Chicken
Add the boneless chicken thighs to the marinade, ensuring they are well coated. Let it marinate for at least 30 minutes.

Cook the Chicken
Heat a skillet over medium heat. Add the marinated chicken and cook for about 6-7 minutes per side until cooked through and caramelized.

Serve
Slice the chicken, drizzle with the thickened sauce, and garnish with chopped green onions and sesame seeds before serving.
Chicken Karaage

Prepare the Marinade
In a bowl, mix soy sauce, sake, minced garlic, and grated ginger. Add the boneless chicken thighs and marinate for at least 30 minutes.

Prepare the Breading
In a separate bowl, combine cornstarch and all-purpose flour.

Coat the Chicken
Remove the chicken from the marinade and coat each piece in the flour mixture.

Fry the Chicken
Heat vegetable oil in a deep pan over medium heat. Fry the chicken pieces in batches for about 5-7 minutes until golden brown and crispy. Drain on paper towels.
Salad

Prepare the Salad
In a large bowl, combine mixed salad greens, sliced cucumber, and halved cherry tomatoes.

Dress the Salad
Drizzle the Japanese sesame dressing over the salad and toss gently to combine.
Rice

Rinse the Rice
Rinse the short grain rice under cold water until the water runs clear.

Cook the Rice
In a rice cooker or pot, combine the rinsed rice and water. Cook according to rice cooker instructions, or bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes.
Miso Soup

Heat the Dashi Stock
In a pot, bring the dashi stock to a gentle simmer.

Add Miso Paste
In a small bowl, dissolve the miso paste in a bit of the warm dashi stock, then add it back to the pot.

Add Tofu and Green Onions
Add cubed tofu and sliced green onions to the soup. Simmer for an additional 2-3 minutes before serving.
