Prepare the Breading Station
In a shallow dish, combine potato starch and all-purpose flour.

Coat the Chicken
Remove the marinated chicken from the refrigerator. Take each piece and coat it thoroughly in the breading mixture, shaking off any excess flour.
Frying the Chicken

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry the Chicken
Carefully add the coated chicken pieces to the hot oil, making sure not to overcrowd the pan. Fry in batches for about 4-5 minutes until golden brown and crispy.

Drain the Chicken
Once fried, use a slotted spoon to remove the chicken from the oil and place it on a plate lined with paper towels to drain excess oil.

Serve the chicken karaage hot with a side of lemon wedges and dipping sauce, if desired.
