Chicken Marinade

Frying

Method

Marinating the Chicken

  1. 1

    Prepare the Chicken

Cut the chicken thighs into bite-sized pieces and place them in a bowl.

  2. 2

    Make the Marinade

In a separate bowl, whisk together soy sauce, sake, mirin, minced garlic, grated ginger, and black pepper.

  3. 3

    Marinate the Chicken

Pour the marinade over the chicken pieces, ensuring they are well coated. Cover the bowl and refrigerate for at least 30 minutes, preferably 1-2 hours for better flavor.

Breading the Chicken

  1. 4

    Prepare the Breading Station

In a shallow dish, combine potato starch and all-purpose flour.

  2. 5

    Coat the Chicken

Remove the marinated chicken from the refrigerator. Take each piece and coat it thoroughly in the breading mixture, shaking off any excess flour.

Frying the Chicken

  1. 6

    Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

  2. 7

    Fry the Chicken

Carefully add the coated chicken pieces to the hot oil, making sure not to overcrowd the pan. Fry in batches for about 4-5 minutes until golden brown and crispy.

  3. 8

    Drain the Chicken

Once fried, use a slotted spoon to remove the chicken from the oil and place it on a plate lined with paper towels to drain excess oil.

  4. 9

    Serve

Serve the chicken karaage hot with a side of lemon wedges and dipping sauce, if desired.
