For the Grilled Chicken

Prep the Chicken
Preheat your grill to medium-high heat. Season the chicken breasts with olive oil, salt, and black pepper.

Grill the Chicken
Place the seasoned chicken breasts on the grill and cook for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C). Remove from grill and let rest.
For the Japanese Style Curry

Cook the Curry
In a large pot, bring 2 cups of water to a boil. Add the chopped vegetables and cook for about 10 minutes until tender.

Add the Curry Roux
Reduce heat and add the Japanese curry roux to the pot. Stir until the roux is completely dissolved and let simmer for another 10 minutes until the sauce thickens. Add green peas in the last few minutes of cooking.
For the Miso Soup

Prepare the Soup Base
In a separate pot, bring 4 cups of water to a boil.

Add Miso
Once the water is boiling, reduce the heat to low and whisk in the miso paste until fully dissolved.

Add Tofu and Green Onions
Add the cubed tofu and sliced green onions to the soup. Heat through for about 5 minutes, being careful not to let it boil.
