Cook the Udon Noodles
Bring a large pot of water to a boil. Add the udon noodles and cook according to package instructions, usually about 8-10 minutes until tender. Drain and set aside.

Prepare the Beef
Thinly slice the beef sirloin against the grain. In a bowl, combine the sliced beef with soy sauce and sesame oil. Let it marinate for at least 15 minutes.

Prepare the Broth Base
In a saucepan, add the beef broth, mirin, miso paste, minced garlic, and sliced ginger. Bring to a simmer over medium heat, stirring occasionally until the miso is dissolved.

Cook the Beef
In a separate pan, heat a little oil over medium-high heat. Add the marinated beef and stir-fry for about 2-3 minutes until just cooked through. Remove from heat.

Combine Noodles and Broth
Once the broth is simmering, add the cooked udon noodles to the broth and let them warm through for about 2 minutes.

Assemble the Dish
Divide the noodles and broth into bowls. Top with the cooked beef, chopped green onions, sesame seeds, and strips of nori seaweed.
