Beef Teriyaki

Miso Soup

Method

Beef Teriyaki

  1. 1

    Prepare the Marinade

In a mixing bowl, combine soy sauce, brown sugar, mirin, sesame oil, minced garlic, and grated ginger. Whisk until the sugar is fully dissolved.

  2. 2

    Marinate the Steak

Place the rib eye steaks in a shallow dish and pour the marinade over them. Make sure the steaks are fully coated. Cover and refrigerate for at least 1 hour or overnight for better flavor.

  3. 3

    Grill the Steaks

Preheat the grill to medium-high heat. Remove the steaks from the marinade, allowing excess marinade to drip off. Grill the steaks for about 5-7 minutes on each side for medium-rare, or until your desired doneness is achieved.

  4. 4

    Prepare the Garnish

While the steaks are grilling, chop the green onions and toast the sesame seeds in a dry skillet over medium heat until golden. Set aside.

  5. 5

    Serve the Steak

Once cooked, remove the steaks from the grill and let them rest for a few minutes. Slice the steaks against the grain, drizzle with additional teriyaki sauce, and sprinkle with green onions and sesame seeds before serving.

Miso Soup

  1. 6

    Prepare the Dashi Stock

In a pot, bring the dashi stock to a gentle simmer over medium heat.

  2. 7

    Add Miso Paste

Remove a small ladle of the hot dashi stock and dissolve the miso paste in it. Then, return the mixture to the pot, stirring well to combine.

  3. 8

    Add Tofu and Seaweed

Cut the tofu into small cubes and add them to the soup along with the dried seaweed. Let it simmer for about 5 minutes.

  4. 9

    Finish with Green Onions

Before serving, chop the green onions and sprinkle them on top of the soup.

  5. 10

    Serve the Soup

Ladle the miso soup into bowls and enjoy it hot alongside the beef teriyaki.
