Rinse 1 cup of sushi rice under cold water until the water runs clear. Cook according to package instructions, usually in 1 1/4 cups of water. Once cooked, let it cool slightly.

Prepare Sushi Rice

In a small bowl, mix 2 tablespoons of rice vinegar, 1 teaspoon of sugar, and 1 teaspoon of salt until dissolved. Gently fold this mixture into the cooked sushi rice and let it cool to room temperature.

Season Rice

Slice the avocado in half, remove the pit, and scoop the flesh out with a spoon. Cut into thin strips. For the cucumber, peel if desired, then slice into thin matchsticks.

Prepare Vegetables

Lay a bamboo sushi mat on a flat surface and place a nori sheet shiny side down on the mat. Wet your hands to prevent sticking and grab a handful of sushi rice. Spread it evenly over the nori, leaving about 1 inch at the top edge.

Assemble the Roll

Place strips of avocado and cucumber in the center of the rice-covered nori.

Add Fillings

Using the bamboo mat, carefully lift the edge of the mat closest to you and start rolling away from you, applying gentle pressure to form a tight roll. Once rolled, use a sharp knife dipped in water to slice the roll into bite-sized pieces.

Roll It Up

After cutting the roll into pieces, sprinkle 2 tablespoons of sesame seeds on top for garnish.

Sprinkle Sesame Seeds

Serve the Avo Kyu Roll with soy sauce, pickled ginger, and wasabi on the side.
