Prepare the Sushi Rice

    Rinse the Rice

    Place 1 cup of sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    Transfer the rinsed rice to a rice cooker or a pot. Add 1 cup of water, cover, and cook according to the rice cooker instructions or bring to a boil, then reduce heat to low and simmer for 20 minutes.

    Season the Rice

    In a small bowl, mix 2 tablespoons of rice vinegar, 1 teaspoon of sugar, and 1 teaspoon of salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow it to cool to room temperature.

Prepare the Filling

    Prepare the Vegetables

    Slice the avocado in half, remove the pit, and scoop the flesh out. Cut it into thin strips. For the cucumber, slice it in half lengthwise and remove the seeds with a spoon, then cut into thin strips. For the asparagus, blanch in boiling water for 2 minutes, then cool in ice water and cut into shorter strips.

Assemble the Maki

    Lay Out the Nori

    Place a bamboo sushi mat on a clean surface. Lay one sheet of nori, shiny side down, on the mat.

    Add the Rice

    Wet your hands to prevent stickiness. Take a handful of sushi rice (about ½ cup) and evenly spread it over the nori, leaving a 1-inch border at the top.

    Add the Filling

    Arrange a few strips of avocado, asparagus, and cucumber across the center of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge of the nori with a little water.

    Cut the Maki

    Using a sharp knife, slice the roll into 6-8 pieces. Clean the knife with a damp cloth between cuts for clean edges.

Serve

    Garnish and Serve

    Sprinkle sesame seeds over the sushi rolls. Serve with wasabi and soy sauce on the side.
