Sushi Rice Preparation

Cook the Sushi Rice
Rinse 2 cups of sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions, typically using a rice cooker or stovetop method. Let it cool slightly after cooking.

Season the Rice
In a small bowl, mix 3 tablespoons of rice vinegar, 1 tablespoon of sugar, and 1 teaspoon of salt until dissolved. Gently fold this mixture into the cooked sushi rice. Let it cool to room temperature.
Assembling the Roll

Prepare the Rolling Station
Place a bamboo sushi mat on a flat surface and lay a sheet of nori on the mat, shiny side down.

Spread the Sushi Rice
Wet your hands with water to prevent sticking. Take a handful of sushi rice and evenly spread it over the nori, leaving about 1 inch at the top edge.

Add Fillings
In the center of the rice, layer 10 pieces of tempura shrimp, 1 cup of spicy tuna, and 1 julienned cucumber.

Roll It Up
Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly to keep the roll tight. Seal the edge of the nori with a little water.
Topping the Roll

Slice the Roll
With a sharp knife, slice the roll into 8-10 pieces, wiping the knife with a damp cloth between cuts.

Add Toppings
On top of the sliced roll, layer 1 cup of crab meat, 4 oz of salmon, drizzle with 4 tablespoons of special sauce, and sprinkle 2 tablespoons each of black and red tobiko.

Garnish
Top with sliced green onions and tempura bits for crunch. Serve with deep-fried jalapeño slices on the side.
