Warm the cider
Pour 4 cups dry hard apple cider into a medium saucepan. Add the thinly sliced apple and place over medium-low heat.
Gently warm the cider until it is steaming and small bubbles form at the edges, about 6–8 minutes. Do not boil — you want to preserve the cider's effervescence and flavor.
Once steaming, reduce the heat to low to maintain a gentle warmth while you add sweeteners and spices.
Stir in 1 tablespoon fresh lemon juice to brighten the apple flavors and balance sweetness.

To the warmed cider add 2 tablespoons maple syrup and 1 tablespoon light brown sugar. Stir until the sugars dissolve fully.
Add 1 teaspoon ground cinnamon, 4 whole cloves, and 1 teaspoon freshly grated nutmeg to the pan. Stir to combine.
Let the mixture gently infuse on low heat for 6–10 minutes, stirring occasionally. Taste after 6 minutes and adjust sweetness or spice to preference (add up to 1 more teaspoon maple or 1/2 tablespoon brown sugar if desired).
If using, add 2 tablespoons dark rum or bourbon now and stir to incorporate. Keep the heat low — just enough to warm the spirit without evaporating it.
Finish & Serve
Strain and serve warm
Remove the pan from the heat. Using a fine-mesh sieve, strain the warmed cider into a heatproof pitcher or individual mugs to remove the apple slices and whole cloves.
If you prefer a slightly effervescent finish, top each serving with a splash (about 1/4 cup per serving) of chilled club soda or sparkling water immediately before serving. Stir gently to combine.
If you plan to serve chilled, cool the spiced cider to room temperature, refrigerate until cold, then serve over ice with sparkling water if desired.
